Nut Crusted Trout

2-lbs trout or salmon fillets
1-cup toasted pistachios or hazelnuts
1/2-cup breadcrumbs
1/2-tsp thyme
1/2-tsp oregano
1-tsp cayenne
2-cloves garlic
1-tbsp olive oil
1-egg white mixed with 1-tsp water

Put nuts, breadcrumbs, thyme, oregano, cayenne, garlic, and olive oil in mini chopper or food processor and chop until consistent
Dip fish in egg mixture and then coat with crumbs
Coat fry pan with vegetable oil
Heat to medium high
Fry fish for about 5 minutes per side until flaked but still moist
You may have to reduce heat a bit if fish starts browning too quickly
