Pan Fried Lake Trout

2 fillets of lake trout
-cup grated Romano or Parmesan cheese
-cup bacon flavoured crackers or saltines, crushed
-cup cornmeal
-tsp garlic powder
-tsp salt
Pinch pepper
-tsp celery salt
1-tsp dill
-tsp cayenne
-cup milk
-cup vegetable oil

Rinse fillets in cold water and pat dry
In a shallow bowl, combine the cheese, cracker crumbs, cornmeal, garlic powder, salt, pepper, celery salt, dill and cayenne
In another bowl, beat egg and milk together
Dip fish in the egg mixture and then gently roll in the crumb mixture to coat
In a skillet, fry fish in the vegetable oil for 5-7 minutes until done, turning once
