SEAFOOD RECIPE:
Tuna Cakes


2-cans tuna, drained
1-cups breadcrumbs
2-tbsp lemon juice
1-tsp cayenne pepper
1-tbsp mayonnaise
4-tbsp sweet pickle relish
2-tbsp fresh parsley, chopped
½-tsp salt
Pepper to taste
1-onion, chopped
2-eggs
2-stalks celery, chopped fine
2 or 3-tbsp vegetable oil for frying


Mix all ingredients until they hold together
Form into patties
If too dry, add a little water by the tablespoon until the desired consistency is achieved
If too moist, add more breadcrumbs
Fry until golden
