SIDE DISH RECIPE:
Grilled Corn, Black Bean and Tomato Salad

2-ears of corn
1-jalapeno pepper
1-tbsp olive oil
4-plum tomatoes, seeded & diced
2-cloves garlic, minced
1-cup chopped Spanish onion
1/2-cup cooked or canned black beans
3-tbsp chopped fresh basil

Dressing
2-tbsp olive oil
1-tbsp honey
2-tbsp limejuice
1-tsp chopped chipotle pepper
Salt and pepper to taste


Brush corn and jalapeno with oil
Grill over high heat, turning, until kernels and jalapeno are slightly charred, about 5 minutes
Remove the skin and seeds from the jalapeno; chop
Slice the kernels from the corn
Combine all salad ingredients
Dressing:
Stir together the olive oil, honey, limejuice and chipotle; add to salad
Season to taste with salt and pepper
