SIDE DISH RECIPE:
Couscous Salad
1-1/2 -cups couscous
1/3-cup olive oil
1/4-cup white wine vinegar
3/4-tsp salt
3/4-tsp pepper
3/4-tsp turmeric
1-19oz. can red kidney beans, drained & rinsed
1-sweet yellow pepper, chopped
1/2-cucumber, chopped
1/4-cup chopped green onion
2-tomatoes, chopped
1/2-cup crumbled Feta or Asiago cheese
1/4-cup fresh mint or oregano
couscous salad

In bowl, cover couscous with 1-1/2 cups boiling water, cover and let stand for 5 minutes
Fluff with fork
Wisk together; oil vinegar, salt, pepper, and turmeric
Pour over couscous
Add kidney beans, yellow pepper, cucumber and onion
Toss with fork to combine
At this point, it can be covered and chilled 6 hours
Add tomatoes, cheese & mint
Toss again
Serve at room temperature
