SIDE DISH RECIPE:
Curried Brown Rice with Chickpeas
½-cup diced onion
½-cup diced red pepper
¼-cup sliced mushrooms
1-tsp minced garlic
¼-cup slivered almonds
Olive oil for sautéing
1-tsp curry powder
1-tsp cumin
Fresh ground black pepper to taste
½-tsp salt
½-cup pineapple juice concentrate
2-cups chicken stock
1-cup brown rice
½-cup chickpeas
½-cup chopped fresh pineapple
Sauté the onion, red pepper, mushrooms, garlic, and almonds in olive oil
Add the curry powder, cumin, black pepper, salt, pineapple juice concentrate, and chicken stock
Bring to a boil
Add the brown rice
Simmer for 45 minutes with the lid on
Add the chickpeas and fresh pineapple
Return the lid and let rest for minutes
