8-oz button mushrooms
3-tbsps lemon juice
1/2-cup oil
2-tbsps chopped parsley
1/4-tsp salt
1/4-tsp pepper
1/4-tsp tarragon
Wipe mushrooms clean with a paper towel
Remove stalks, sliced thinly
Combine lemon juice, oil, salt, pepper, tarragon and chopped parsley
in a bowl; mix well
Add mushrooms; mix well
Cover and marinate 4 hours or overnight
