SIDE DISH RECIPE:
Mushroom Rice Pilaf for Two

1/4-cup chopped red pepper
2-tbsp chopped onion
2-tsp butter
1-can mushrooms, drained
2/3-cup water
1/3-cup uncooked long grain rice
1-tsp (1 package) chicken bouillon powder
1-tsp dried parsley
1/8-tsp salt
Dash pepper


In saucepan over medium high heat, sauté red pepper and onion in butter
Add mushrooms and heat through
Stir in water, rice, bouillon, parsley, salt and pepper
Bring to a boil; reduce heat to a simmer
Cover and cook 14-16 minutes or until all the liquid is absorbed and rice is tender
