SIDE DISH RECIPE:
Red Pepper and Broccoli Pilaf
1 ½-cups chicken stock
¾-cup long grain rice
1-onion, chopped
1-tsp dried thyme
2-cups tiny broccoli florets and thinly sliced stems
1-small red pepper, finely chopped
In a large saucepan, combine stock, rice, onion, and thyme
Bring to a boil over high heat
Reduce heat to low and simmer, covered for 15 minutes
Add broccoli and red pepper, do no stir
Continue to cook for, covered for 5 minutes
Remove from heat and let stand for 5 minutes
Stir to combine
Season with salt and pepper
