SIDE DISH RECIPE:
3 Pepper, Rice and Chicken Salad with Ginger Dressing

3-cups cooked white or brown rice
1-cup cooked chicken, diced
1/2- red pepper thinly sliced
1/2-yellow pepper thinly sliced
1/2-orange pepper, thinly sliced
4-green onions, sliced
1/4-cup chopped fresh coriander

Dressing
3-tbsp vegetable oil
1/2-tsp sesame oil
2-tbsp rice vinegar
1-tbsp finely minced fresh ginger
1-tsp Asian chili-garlic sauce
1/2-tsp salt
1/2-tsp sugar
1/4-tsp pepper


Combine rice, chicken, peppers, green onion, and coriander in a large bowl
Whisk together oils, vinegar, ginger, chili-garlic sauce, salt, sugar, and pepper in small bowl
Pour over salad and toss gently, mixing well
Serve immediately or cover and refrigerate until serving
Remove from fridge 20 minutes before serving
