SIDE DISH RECIPE:
Caribbean Style Split Pea and Brown Rice Pilaf

½-cup yellow split peas, washed and picked over
2-tbsp vegetable oil
2-cloves garlic, chopped
1-2” stick of cinnamon
2-sticks clove
1-large onion, sliced
½-tsp turmeric
1-cup brown rice, washed well
2½-cups vegetable or chicken stock
1-tbsp chopped cilantro
Salt to taste


Cook split peas in water for about 10 minutes; drain
Heat oil in saucepan; add garlic, cinnamon, cloves and onion
Stir and fry until mixture becomes aromatic and onions are tender, about 3-5 minutes
Add turmeric and cook for a few minutes
Add split peas and rice
Stir and fry for a few minutes more
Add broth and bring to a boil
Simmer for about 40-45 minutes
Sprinkle on cilantro
Fluff with a fork and serve
