SIDE DISH RECIPE:
Twice Baked Potatoes 2

4-large potatoes
2-tbsp olive oil
2-tsp paprika
3/4-cup roughly chopped bacon
6-tbsp sour cream
1/3-cup diced blue cheese
1-tbsp freshly chopped parsley


Preheat oven to 400*F
Scrub potatoes and prick a few times with a fork
Place directly on top shelf of oven
Bake for at least 1 hour or until tender
Set aside the potatoes until cool
Cut in half and scoop out the flesh into a bowl and reserve
Preheat broiler
Line a pan with aluminum foil
Mix together the oil and paprika
Use half of oil to brush the outside of the potato
Place on pan and broil, turning as necessary, until crisp
Heat the remaining oil and gently fry the bacon until crisp
Add to the reserved potato flesh along with the blue cheese, sour cream, and parsley
Fill the skins with the blue cheese mixture
Return to oven for additional 15 minutes to heat through
Sprinkle with additional paprika and serve immediately
Can cut potato skins in half for appetizer servings
