Two Bean Beef Chili

2-lb boneless cross rib pot roast
2-tbsp vegetable oil
2-onions, diced
2-large carrots, diced
2-stalks celery, diced
3-cloves garlic, minced
1-tbsp dried oregano
1-28oz can stewed tomatoes
1-5 1/2oz can tomato paste
1-19oz can black beans, drained and rinsed
1-19oz can red kidney beans, drained and rinsed
2-tbsp chili powder
-tsp salt
1-sweet green pepper, diced
1-tbsp hot pepper sauce (or to taste)

Cut beef into1/2-inch cubes
In a large skillet, heat oil over medium-high heat
Brown the beef in batches and add to slow cooker
Pour off any fat from skillet
Fry onions, carrots, celery, garlic and oregano over medium heat until soft, about 5 minutes
Scrape into slow cooker
Add tomatoes, tomato paste, both type of beans, chili powder and salt to slow cooker
Cover and cook on low for 6 hours or until meat is tender
Skim off any fat
Stir in green peppers and hot pepper sauce
Cover and cook for 30 minutes

Makes 6-8 servings
