Black Beans & Sausage

3-cups black beans, uncooked
4-cups chicken or vegetable stock
8-oz smoked sausage, chopped
3-cups chopped onions
1-chipotle in adobo sauce, chopped (or chipotle flavoured Tabasco sauce to taste)
2-cups salsa
1/2-cup fancy molasses
2-tsp dry mustard
1/2-tsp salt
1/4-tsp pepper
2-tbsp cornstarch

Rinse beans
In slow cooker, cover beans with 3 times their volume of water
Let soak 12 hours or overnight
Drain and return beans to slowcooker
Add stock
Cover and cook on high for 3 hours
Add sausage, onions, chipotle, salsa, molasses, mustard, salt & pepper
Cover and cook on high for 3 hours
Whisk cornstarch with 2-tbsp water
Whisk into slow cooker
Cover and cook for 15-20 minutes or until thickened
