SLOW COOKER RECIPE: Chicken and Sausage Stew


1-lb hot Italian sausage
1/4-cup all-purpose flour
1/2-tsp salt
1/4-tsp black pepper
3-4-lbs chicken thighs
4-carrots, peeled and chopped
3-large garlic cloves, halved
1-28oz can of plum tomatoes, drained and quartered
1/2-cup chicken stock
2-tsp Italian seasoning
1-tsp dry mustard
1-yellow pepper, cut into strips
1-red pepper, cut into strips
2-small zucchini, sliced


In a large non-stick skillet over medium heat, cook sausage for 6-8 minutes or until brown on all sides
Slice into 1inch pieces and transfer to slow cooker
In a bowl or plastic bag, combine flour, salt, and pepper
In batches, add chicken to flour mixture and toss to coat
Transfer chicken to slow cooker
Add carrots, onion, garlic, and tomatoes
In a bowl, combine stock, Italian seasoning, and dry mustard; stir to mix
Pour into slow cooker
Cover and cook on low for 6-8 hours, until carrots are tender and stew is bubbling
Add yellow pepper, red pepper, and zucchini
Cover and cook on high for another 15-20 minutes before serving


This recipe can be assembled the night before
Follow the preparation directions (without adding the peppers and zucchini) and refrigerate in slow cooker stoneware.
This recipe makes a ton. You might want to half it.
