Crockpot Spoon Bread

One box of Jiffy muffin mix
4-eggs
1-stick of butter, melted
1-box of frozen spinach, thawed
1/2-cup of chopped red bell pepper (optional)
1-cup of cottage cheese

Mix all ingredients and pour into a crockpot
Cook on low for about 4 hours with lid slightly ajar to let excess condensation escape
