COOKER RECIPE: French Canadian Yellow Split Pea Soup
1-lb yellow split peas
8oz smoked pork hock
3-medium carrots, diced
1-large potato, peeled and diced
1-stalk celery, finely chopped
1-bay leaf
1/4-tsp thyme
1/4-tsp basil
1/4-tsp oregano
Salt and pepper to taste
Place peas in a bowl and add enough cold water to cover
OR place peas in a pot, cover with water, bring to boil, remove from heat and let stand 1
hour
Rinse well and place in slow cooker
Add 7-cups water, smoked pork hocks, carrots, potato, celery, bay leaf, thyme, basil, and
oregano
Cover and cook on low for 10-12 hours or high for 6-8 hours, until soup is thick and
bubbling
With a slotted spoon, gently remove pork hock from soup
Remove meat from bone, cut into chunks and return to soup
Remove bay leaf and discard
Season with salt and pepper to taste
Serve
