COOKER RECIPE: Greek Stew with Feta
3-lbs stewing beef
7-small onions (1 ½-lb)
3-cloves garlic, minced
1-28oz can tomatoes
½-cup beef stock
1-5 ½-oz can tomato paste
2-tbsp red wine vinegar
2-tsp dried oregano
½-tsp salt
½-tsp pepper
½-cup all-purpose flour
1-sweet green pepper, chopped
½-cup crumbled feta cheese
2-tbsp chopped fresh parsley
Trim and cut beef into 1-inch cubes
Place in slow cooker
Cut onions lengthwise into wedges
Add to slow cooker
Add garlic & tomatoes
Combine beef stock, tomato paste, vinegar, oregano, salt and pepper
Pour into slow cooker
Cover and cook on low for 8-9 hours (6 hours on high) until meat is tender
In a small bowl, whisk flour with ½-cup cold water
Whisk in ½-cup of the hot liquid
Whisk all back into slow cooker
Add green pepper
Cover and cook on high for 10 minutes or until thickened
Serve sprinkled with feta cheese and parsley
