COOKER RECIPE: Harira
(Moroccan Soup)
Harira usually contains either beef or lamb. Try this meatless version
1-tbsp extra virgin olive oil
2-small onions, chopped
1-tsp ground cumin
1-tsp ground ginger
1-tsp turmeric
1-tsp pepper
1-large bunch fresh coriander
1-large bunch fresh parsley
1-stick cinnamon
6-cups chicken stock
1-cup green or brown lentils
1-19oz can chickpeas, drained and rinsed
1-28oz can diced tomatoes
¼-cup lemon juice
1-tsp ground cinnamon
In skillet, heat oil over medium heat
Fry onions, stirring occasionally, until soft, about 5 minutes
Add cumin, ginger, turmeric, and pepper
Fry, stirring for 1 minute
Scrape into slow cooker
Chop enough of the coriander and parsley to make ¼-cup each; set aside
Tie together the remaining bunches with the cinnamon stick and add to slow cooker
Add stock, lentils, chickpeas and tomatoes to slow cooker
Cover and cook on low for 6 hours or until vegetables are tender
Discard herb bunch
Stir in lemon juice and reserved chopped herbs
Garnish
Ladle soup into bowls
Sprinkle with ground cinnamon
