SNACK
RECIPES: Baba Ghanoush
2-medium eggplants
2-tbsp tahini (a thick paste made from ground sesame seeds)
2-tbsp olive oil
2-tbsp lemon juice
3-cloves garlic, minced
1/2-tsp salt
2-tbsp finely chopped parsley
1-green onion, finely chopped
Prick eggplant all over with fork
Grill over medium heat on closed barbecue or broiler, about 6 inches from heat
Turn occasionally until soft and charred, about 40 minutes
Cool
Cut lengthwise and scoop flesh into food processor
Add tahini, olive oil, lemon juice, garlic, and salt
Process until smooth
Stir in parsley and green onion
Add more salt to taste
Serve with pita crisps or raw veggies
Also great on sandwiches instead of mayo
Makes about 2 cups
