RECIPES: Honey Granola Bars
1 1/2-cups rolled oats
1 1/2-cups all-purpose flour
1/4-cup toasted wheat germ
1-tsp baking powder
1-tsp cinnamon
1/2-tsp salt
1/2-cup dried apple slices, cut into 1/2" pieces
1/2-cup chopped almonds
1/2-cup raisins
1/4-cup toasted sunflower seeds
2-tbsp sesame seeds
2/3-cup butter
1/2-cup packed brown sugar
2-eggs
1/2-cup honey
2-tsp vanilla
Place oats in dry skillet over medium heat and lightly toast, stirring constantly, about 4
minutes; Cool
In a large bowl, combine toasted oats, flour, wheat germ, baking powder, cinnamon, and salt
Add apples, raisins, almonds, and seeds; stir to blend
In another large bowl, cream butter and brown sugar with an electric mixer until light and
fluffy
Add eggs, one at a time, beating well after each addition
Add in honey and vanilla until blended
Spread mixture into lightly buttered 13x9" baking pan
Bake in a pre-heated 350* oven for 35 minutes, or until edges just begin to pull away from
the side of the pan
Cool on wire rack before cutting into bars
Makes 24 bars
