SNACK RECIPES:
Low Fat Apricot Oatmeal Bars


1-cup whole wheat flour
½-cup oat bran
½-tsp salt
½-tsp baking soda
½-tsp cinnamon
1-egg, beaten
¼-cup packed brown sugar
½-cup plain low fat yogurt
1/3-cup water
¼-cup molasses
¼-cup cooking oil
1-cup quick cooking rolled oats
¾-cup chopped dried apricots
½-cup raisins


In a large mixing bowl, combine the flour, oat bran, salt, baking soda and cinnamon
In a medium mixing bowl, combine the egg, brown sugar, yogurt, water, molasses, and oil
Stir into flour mixture, mix well
Stir in oats and apricots
Lightly spray a 13x9 inch baking pan with no-stick spray
Spread mixture into pan
Bake in a 350°F oven for 20-25 minutes, until toothpick inserted in the centre comes out clean
Cool

Makes 24 bars
