SOUP
RECIPE: Gazpacho

3-ripe tomatoes, peeled
1/2-cup tomato juice
1-cucumber, peeled, seeded, and chopped
1-small green pepper, seeded and chopped
3-cloves of garlic
1/2-tsp dried basil
1/4-tsp dried cumin
3-tbsp lemon juice
4-tsp Tabasco sauce (more or less)
1/4-cup olive oil
1/2-tsp salt
1/2-tsp freshly ground black pepper


In a food processor or blender, process the tomatoes, tomato juice, cucumber, green pepper, garlic, basil, cumin, lemon juice, and Tabasco until smooth
Pour into serving bowl and stir in olive oil, salt, and pepper
Chill thoroughly
