SOUP RECIPE: Onion Soup Gratinee

4-5 large yellow onions
3 tbsp margarine
1/4 tsp coarse black pepper
1 tbsp all purpose flour
3 cans (10-3/4oz) beef broth
3 cups water
1 bay leaf
Salt & pepper
6-8 slices French bread
2 tbsp Parmesan cheese
1 cup grated Gruyere or Swiss cheese

Peel onions, slice thinly (about 5 cups)
Put butter in 5 qt saucepan & heat to melt (med-hi heat)
Add onions & black pepper to butter
Sauté onions
Sprinkle onions with flour
Stir well
Remove from heat after 1 min
Gradually add beef broth (stirring)
Stir in water & bay leaf
Return to hi heat and bring to boil
Reduce heat, cook uncovered for 30-40 min
Remove bay leaf
Add salt & pepper to taste
Put soup into onion soup bowls
Toast bread then float on soup
Sprinkle Parmesan & Gruyere
Place bowls under broiler until cheese turns golden
Serve immediately
