RECIPE: Baked
Butternut Squash
1-large butternut squash (about 1 lb.)
Salt & freshly ground black pepper
Anise seed
Cardamom
2 to 3-tbsp light or dark brown sugar
8-tbsp butter, melted
2-tbsp fresh lemon juice
Peel and cut open the squash
Remove and discard seeds and fibres
Cut the squash into 1 inch cubes
Turn the squash into a buttered 2-quart baking dish
Sprinkle with salt and pepper, anise seed, and brown sugar
Drizzle the butter and lemon juice over the top
Bake the squash, uncovered, in a pre-heated 350* oven for about 30 minutes or until tender
Microwave time is 20 minutes
