Curried Vegetables

1-tbsp vegetable oil
1-onion, thinly sliced
3-cloves garlic, minced
4-tsp mild curry paste
1-carrot, cut into matchstick size strips
1-cup snow peas, cut into matchstick size strips
2-cups bean sprouts
1-tbsp soy sauce

In a non-stick skillet, heat oil over medium heat
Cook onion, stirring occasionally until golden, about 8 minutes
Add garlic, curry paste, carrots and snow peas
Cook, stirring occasionally until veggies are tender-crisp, about 5 minutes
Add bean sprouts and soy sauce
Cook, stirring just until bean sprouts are slightly wilted, about 1 minute
