VEGETABLE RECIPE:
Stuffed Peppers


3-large peppers, halved lengthwise (colour of choice)
2-cups cooked orzo pasta (1-cup dried) (or rice)
3/4-cup chopped onion
2-cloves garlic, minced
2-tsp basil
1-tsp oregano
1/2-tsp salt
1/2-tsp pepper
1/2-lb, or 2 links Italian sausage, removed from skin
1-14oz can of diced tomatoes, well drained
3/4-cup provolone or mozzarella cheese
6-tbsp grated Parmesan, divided
3-tbsp chopped fresh parsley


Microwave peppers, covered, on high for 6 minutes
In fry pan, fry sausage until almost done
Drain, and add garlic and onion and cook until done
Add tomato, basil, oregano, salt, and pepper
Remove from heat, stir in orzo, provolone, 3-tbsp Parmesan and parsley
Arrange pepper halves in shallow baking dish
Fill with mixture
Sprinkle with remaining Parmesan
Bake at 375* for 25 minutes
